OK, I have multiple weaknesses and this is one. We use local Virginia honey, which, in my opinion, is the best honey in the world.  Honey is a natural sweetener which promotes better blood sugar control, and is far better for you than refined sugars or other synthetic sweeteners. It’s an incredible source of antioxidants, while it boosts your immunity and helps with local allergies. One of the best secrets is that consuming honey and protein actually helps with muscle recuperation and glycogen restoration. That means that every Speedie B provides a great recovery package and helps make your muscles more efficient.

Sure, we all think of rolled oats as an essential breakfast staple on those frigid winter mornings, but they're so much more than comfort food. Rolled oats help prevent heart disease and build immune response. They're an excellent source of fiber and selenium, which studies have found to decrease asthma symptoms and inhibit free radicals.

Toasting unsweetened shredded coconut brings out its natural sweetness, so there's no need to add sugar.  In addition to being just plain tasty, coconut is an excellent source of energy (manganese and copper), fiber, and other great antioxidants (selenium).

We've all heard about the excellent health benefits of antioxidant-rich dark chocolate. But why make excuses for great taste?

I love Virginia summers because of all the sweet and tart cherries. There is often a bowl of red cherries sitting on our dinner table – though not for long.  What makes cherries so great is that they contain a ton of antioxidants, can help with muscle soreness, and are a good anti-inflammatory.

I have fond memories of eating dates while excavating an archaeological site in Africa one summer. Turns out the naturally-sweet fruit that brings me back to those amazing sunsets on the island of Pemba is a magic food. Dates are a great source of energy, and have been shown to strengthen bones. They also contain selenium, manganese, copper, vitamin A, iron, vitamin B-6, niacin, and other incredible antioxidants. Phew. This little fruit packs a heck of a punch!

Cinnamon is one of those flavors and scents that sparks a memory for everyone - from holiday meals to those Red Hot candies. But it is the spice that keeps on giving. It helps with blood sugar control, serves as an anti-inflammatory and even boost brain function...now where did I put the extra cinnamon?

As a kid growing up, my mom would put out almonds as a healthy snack. I loved the delicious crunch each almond made, and was always surprised how soon a small bowlful would disappear.  But Mom knew that almonds provided a lot more than a satisfying taste and texture. They're a rich source of energy (copper and manganese), potassium, vitamins (B&E), and  protein. Mom always knows best!

I can’t lie to you. I added vanilla bean because I love the taste.  And it is that added “love” that makes each bar taste that much better. You might be surprised to learn that the vanilla bean also contains a high concentration of vitamin B, which is essential for energy, and trace minerals like calcium, magnesium, potassium, iron and zinc, which are important for strong bones and healthy muscle tone.

Peanuts are one of the most versatile foods - use them to punch up an ice cream sundae, as a go-to snack at a ballgame, or to make a Chinese rice dish. Peanuts sustained me during long summers of archaeological site excavation in Labrador, Canada.  I'd sit on the top of a hill with the cool Arctic breeze in my face, peanut butter and jelly sandwich in hand, and watch the whales and seals frolic. Peanuts are a rich source of energy (manganese) and protein. They are high in antioxidants, a heart-healthy fat, and help decrease hunger. So why wouldn’t I put them in Speedie B’s?

I came to flax seeds a little later in life by stumbling on that great nutty flavor by accident. Boy am I glad I did! This antioxidant powerhouse is full of some pretty amazing benefits, like a ton of Omega-3 and fiber, even providing cardiovascular benefits.

My high school softball coach hated it when we ate sunflower seeds during games, because we'd spit the hulls into the dugout. While I dispense with the hulls much more decorously when making Speedie B’s, I added the sunflower seeds because they're a great source of selenium, magnesium and vitamin E, all of which helps preserve healthy skin.

Yup. Chia seeds are the same seeds you used to grow your ch-ch-ch-Chia Pet.  But long before the infamous green animal appeared on our TV sets, Chia seeds were a staple in the diets of the Aztecs and the Mayans.  These super-seeds are jam-packed with protein, omega-3, and fiber. They expand during digestion, which helps curb your appetite. Toiling anonymously in the background, providing essential nutritional benefits... Chia is Speedie B's Best Supporting Ingredient.
